Late Night Craving Fulfilling Nachos

I posted this on my Instagram story and got a lot of feedback such as “omg I want them” or “that looks SO good right now”. Needless to say, I think we can all relate to those late night unhealthy food cravings. At least personally I don’t crave carrots, I crave things like milkshakes and nachos…mmmmm milkshakes and nachos. Milkshakes will have to be a later post…we’ll see where the late night cravings take us!

Nachos Ingredients

Your favorite tortilla chips
1 avocado
1 cup of shredded cheese
1/4 of yellow onion
1/2 cup of diced tomato
1/2 tsp cumin
1/2 tsp salt
1/4 tsp peper
1 tbs lime juice

Directions

First make your guacamole. Cut your avocado in half by slicing it all the way around the middle and twisting it to separate the two halves. Then remove the seed and scoop out the fruit. Next mash it so that it’s not too chunky but not completely smooth either.

Once it’s mashed, add in your lime juice, cumin, salt, and pepper. (I estimated the measurements I used in the ingredient’s list but usually I don’t measure and just do a few taste tests as I go along to see if it’s good.) Also if you want a little kick, add in a dash of chili powder.

Next dice your tomato and onion. I got this beautiful tomato from my local farmer’s market and I was honestly impressed when I cut it open!

Now put your chips on a plate and cover them with cheese!! I used a shredded Mexican blend and Trader Joe’s organic stone ground blue corn tortilla chips that have quinoa and chia seeds in them so I can tell myself my nachos are a little better for me (lying to myself).

Then assemble the nachos: I went in the order of onions, tomatoes, then I drizzled the salsa throughout, and topped with the guac. Yum, just want you want to satisfy a late night craving. It’s not too hard to make and only takes about 15 minutes which is key since time is of the essence when it comes to late night cravings!
