Salmon Salad

Today’s quick and tasty salmon recipe. I made this for lunch in between classes and it only took me about 15-20 minutes! However I did marinate the salmon in advance. One thing about this salmon that’s great is that it would taste good on most salads so it’s pretty versatile. I’ll put the ingredients down below I used for my salad but honestly I just threw together some veggies I got from the farmers market this weekend. So just use whatever veggies your feeling that day.
INGREDIENTS
Salmon filet
1 tbs of olive oil
1 lemon
2 teaspoons of honey
2 cloves of garlic
Salt and pepper to taste
Salad
Organic Mixed greens
1 mushroom
1 tbs of diced onion ( about two slices chopped)
5 cherry tomatoes
1 Tbs of organic shredded cheese
DIRECTIONS
1. I started by mirinating my salmon in Zias Italian dressing with a minced garlic clove and pepper. You just put the salmon and the ingredients in a small plastic bag and let it sit for about 2 hours.
2. Heat up a little olive oil in a pan to cook the salmon in. Take the salmon out of the bag and lightly rinse off the excess marinate. Place the salmon in the pan skin side down (if you choose to leave it on). Let it cook on that side for 5-7 minutes. While that cooks mince three cloves of garlic, and then mix the honey and lemon juice in a bowl. When it is time to flip your salmon the salmon should not stick to the bottom of the pan if it does it may need to cook for a little bit longer. Once the salmon has been flipped add in the minced garlic so it can sauté. After about one minute add in the lemon and honey mixture and let the salmon cook for 3-4 more minutes. Remove the salmon from the heat and place it on top of your salad. Bon Appétit!
